Spring Onion Pesto
For the ones who fancy pesto, this pesto-inspired dip made using spring onions is a must-try!
It can be eaten with steamed ghee rice, served as a dip, or used to create an Asian-inspired pasta al pesto.
Roughly chop 1 bunch of spring onion
Roughly chop ¼ bunch of coriander
Remove the stems of 2 small green chili and roughly chop them
Add the spring onion, coriander and chilies to a food processor and blend until smooth—if they don't fit all at once, divide in two parts. Add part of the ½ cup of vegetable oil to help blend
Add the remaining herbs, ¼ cups of cashew nuts, and 4 garlic cloves. Blend until smooth
Add the remaining vegetable oil and season with salt to taste. Blend until homogeneous. The spring onion pesto is ready
Enjoy! Put it on top of some steamed rice or use it as a dipping sauce! Any way is delicious!
