Spring Onion Pesto


For the ones who fancy pesto, this pesto-inspired dip made using spring onions is a must-try!

It can be eaten with steamed ghee rice, served as a dip, or used to create an Asian-inspired pasta al pesto.

  • Roughly chop 1 bunch of spring onion

  • Roughly chop ¼ bunch of coriander

    Step 1
  • Remove the stems of 2 small green chili and roughly chop them

    Step 2
  • Add the spring onion, coriander and chilies to a food processor and blend until smooth—if they don't fit all at once, divide in two parts. Add part of the ½ cup of vegetable oil to help blend

  • Add the remaining herbs, ¼ cups of cashew nuts, and 4 garlic cloves. Blend until smooth

  • Add the remaining vegetable oil and season with salt to taste. Blend until homogeneous. The spring onion pesto is ready

  • Enjoy! Put it on top of some steamed rice or use it as a dipping sauce! Any way is delicious!
