Stir-frying vegetables is a healthy and delicious way to incorporate more vegetables into your diet.

This recipe can be used as a side dish or as a base for many dishes, including borscht.

  • Peel, trim and finely slice ½ carrot into rounds. Slice the rounds into thin sticks

  • Trim, peel, and mince ½ small onion

  • Peel, trim, and finely slice ½ celeriac into rounds. Slice the rounds into thin sticks

  • Trim and remove the core of 1 small red bell pepper. Slice it into thin sticks

  • Cut 1 small celery stalk into thirds lengthwise and thinly slice them

  • Add 2 tbsp of vegetable oil to a hot skillet over high heat

  • Add the onion and stir until translucent

  • Add the carrot

  • Add the celery root and stir

  • Add salt to taste and stir

  • Add the red bell pepper and cook until all vegetables are soft and browned. The stir-fried vegetables are ready
