Stir-Fried Vegetables
Stir-frying vegetables is a healthy and delicious way to incorporate more vegetables into your diet. This recipe can be used as a side dish or as a base for many dishes, including borscht.
Peel, trim and finely slice <quantity>½</quantity> carrot into rounds. Slice the rounds into thin sticks
Trim, peel, and mince <quantity>½</quantity> small onion
Peel, trim, and finely slice <quantity>½</quantity> celeriac into rounds. Slice the rounds into thin sticks
Trim and remove the core of <quantity>1</quantity> small red bell pepper. Slice it into thin sticks
Cut <quantity>1</quantity> small celery stalk into thirds lengthwise and thinly slice them
Add <quantity>2<unit>tbsp</unit></quantity> of vegetable oil to a hot skillet over high heat
Add the onion and stir until translucent
Add the carrot
Add the celery root and stir
Add salt to taste and stir
Add the celery stalk and stir
Add the red bell pepper and cook until all vegetables are soft and browned. The stir-fried vegetables are ready
Use it as it is or store in a jar in the refrigerator for up to 3 days
