Sucanat Filtered Coffee
A filtered coffee made from coffee beans roasted in a copper pot with sucanat sugar. A delicacy based on Brazilian popular culture, especially in the region of Minas Gerais.
Place a large copper pot over medium-high heat and add <quantity>500<unit>g</unit></quantity> of green coffee beans
Stir the coffee for 12m until the beans are light golden brown
Add <quantity>25<unit>g</unit></quantity> of sucanat sugar and roast for 8m, stirring constantly, until the beans are deep caramelized brown and shiny. The roasted sucanat coffee is ready
Bring <quantity>1.1<unit>L</unit></quantity> of water to a boil over high heat
Grind the coffee beans into a medium-fine powder
Put a coffee filter in a coffee dripper over a recipient
Wet the filter evenly with <quantity>100<unit>ml</unit></quantity> of the boiling water. Discard the water
Add <quantity>100<unit>g</unit></quantity> of the grind coffee
Pour in <quantity>¼</quantity> of the remaining hot water, swirl to wet all the ground coffee, and allow to filter. Repeat 3 more times until the entire liter is used
Remove the dripper. The sucanat filtered coffee is ready
Pair it with a slice of cake or a nice buttery toast and enjoy!
