
Sweetened Pineapple

A very simple recipe that can be used in desserts, salads, appetizers or even entrees
Pineapples are indigenous to South America but have been growing in tropical areas around the world for several hundred years. Because of this, they can be found in the cuisines of many cultures along the equator. Due to their versatility, pineapples are often used in both sweet and savory applications.
Put 1½ cups of sugar in a sauce pan
Add ⅔ cup of vinegar
Add ¼ cup of water
Add ¼ piece of star anise
Add the white ends of 2 stalks of lemongrass
Simmer on medium heat until the sugar is fully dissolved
Pour the warm syrup over 1 diced pineapple through a sieve
The Sweetened Pineapple is ready
