Tapenade
Tapenade is a vibrant olive-based spread that captures the bold flavors of the Mediterranean. Made with olives, capers, anchovies, garlic, and olive oil, it delivers a perfect balance of salty, tangy, and umami-rich notes. It can elevate everything, from simple toasts to elaborate dishes. Crush <quantity>1½<unit>cup</unit></quantity> of black olives, a few at a time, to easily remove the pits
Add ⅔ of the pitted olives, <quantity>1<unit>tbsp</unit></quantity> of capers, and <quantity>½<unit>tbsp</unit></quantity> of mustard to a food processor
Add <quantity>2</quantity> canned anchovy fillets, <quantity>½<unit>tbsp</unit></quantity> of extra virgin olive oil, and <quantity>1<unit>tbsp</unit></quantity> of water
Process until all the ingredients are well combined but still have a slightly grainy texture. Scrape the sides of the processor for a more uniform texture
Add the remaining ⅓ of the pitted olives and process just to slightly chop the olives
Add <quantity>1<unit>tbsp</unit></quantity> of olive oil and slightly process to combine. The tapenade is ready
