Toasted Barley Old Fashioned
A twist on the classic Old Fashioned with a toasted flavor.
Add <quantity>60<unit>g</unit></quantity> of pearl barley to a medium pot over medium heat. Toast for 5m until fragant
Add <quantity>300<unit>ml</unit></quantity> of water and simmer it for 10m to infuse the flavors
Strain it through a fine mesh sieve or cheesecloth. Add <quantity>300<unit>g</unit></quantity> of sugar
Add <quantity>20</quantity> raisins and the peels from <quantity>1</quantity> lemon and <quantity>1</quantity> grapefruit
Let the mixture sit for 1d to infuse the flavors
Strain the solids. The toasted barley cordial is ready
Add <quantity>10<unit>ml</unit></quantity> of the Toasted Barley Cordial and <quantity>3<unit>dashes</unit></quantity> of Angostura bitters to a cocktail shaker
Add <quantity>50<unit>ml</unit></quantity> of Scotch whisky
Fill the cup with ice cubes and stir for 15s
Add <quantity>1</quantity> clear ice to an old fashioned glass and strain the drink into the glass
Express <quantity>1</quantity> orange peel on top of the drink and twist it to use as a garnish. The toasted barley old fashioned is ready
