This is a simple concentrated tomato paste. Use it as an ingredient on its own or as a base to other sauces.
Add 2 cups of tomato purée to a pan over medium-high heat
Add salt to taste and stir to combine
Cook the tomato purée for 10m, stirring occasionally until it is reduced by half
Transfer the tomato purée to a bowl
Add ¼ cup of extra virgin olive oil and mix to combine
The tomato concentrate is ready
