Tomato Vinaigrette
A typical side to Brazilian barbecue, combining acidic flavors with the freshness of herbs and tomatoes. It goes very well with all types of grilled meats.
Peel and small dice <quantity>1</quantity> red onion
Dice <quantity>1<unit>cup</unit></quantity> of cherry tomatoes
Add the diced onion and cherry tomatoes to a bowl
Add <quantity>2<unit>tbsp</unit></quantity> of chopped chives and <quantity>1<unit>tbsp</unit></quantity> of chopped parsley
Add salt to taste, <quantity>⅓<unit>cup</unit></quantity> of red wine vinegar and <quantity>⅓<unit>cup</unit></quantity> of extra virgin olive oil
