Tucupi
Tucupi is a traditional Brazilian ingredient extracted from fermented cassava that adds a unique and vibrant flavor to dishes. Trim, peel, and small chop <quantity>2</quantity> small cassava roots
Add them to a blender
Add <quantity>3<unit>cups</unit></quantity> of water and blend on high speed until you obtain an homogeneous mixture
Strain it through a fine mesh sieve
Transfer the liquid to a glass container and cover with cling film. Poke small holes with a knife and let it rest for 3d in room temperature until all the sediment is at the bottom
Transfer the liquid to a saucepan over low heat. Use a fine mesh sieve to hold the solids from the bottom
Peel <quantity>1<unit>thumb</unit></quantity> of ginger and add to the pan
Trim and deseed <quantity>1</quantity> chili pepper. Add to the pan
Simmer until the liquid is reduced by half. Transfer to a container and discard the ginger and chili pepper. The tucupi is ready
