Tucupi

Tucupi is a traditional Brazilian ingredient extracted from fermented cassava that adds a unique and vibrant flavor to dishes.
Whether used as a base—for soups, stews, or sauces—or as a condiment, tucupi has a tangy and slightly sour taste that will enhance the flavors of various dishes, leaving a memorable impression on the palate.

Trim, peel, and small chop 2 small cassava roots
Add them to a blender
Add 3 cups of water and blend on high speed until you obtain an homogeneous mixture
Strain it through a fine mesh sieve
Transfer the liquid to a glass container and cover with cling film. Poke small holes with a knife and let it rest for 3d in room temperature until all the sediment is at the bottom
Transfer the liquid to a saucepan over low heat. Use a fine mesh sieve to hold the solids from the bottom
Peel 1 thumb of ginger and add to the pan
Trim and deseed 1 chili pepper. Add to the pan
Simmer until the liquid is reduced by half. Transfer to a container and discard the ginger and chili pepper. The tucupi is ready
Enjoy! Use it as a base for sauces and stews. Duck and chicken stews are especially delicious when made with tucupi!
