Vanilla Cookies

Add <quantity>100<unit>g</unit></quantity> of sugar, a pinch of salt, and <quantity>115<unit>g</unit></quantity> of butter to the bowl of a stand mixer
Add <quantity>5<unit>g</unit></quantity> of vanilla paste and whisk with the paddle attachment on medium-low speed until combined
Add in <quantity>1</quantity> egg and continue beating at the same speed. Stop beating, add <quantity>40<unit>g</unit></quantity> of cornstarch and mix at low speed until roughly combined
Add <quantity>240<unit>g</unit></quantity> of all-purpose flour in two batches while mixing on low speed until combined
Transfer the dough to a counter top lined with parchment paper
Cover with another sheet or parchment paper and roll flat until about <quantity>3<unit>mm</unit></quantity> thick
Rest the dough on a flat tray in the fridge for 30m until chilled
Peel off the parchment paper from both sides and remove one sheet. Cut the cookies with a cookie cutter and place them on a baking tray lined with parchment paper or a silicone baking sheet
Shape with you favorite desing, if desired. Coat the cookie cutter with additional cornstarch if needed
Preheat the oven to <temperature>165<unit>°C</unit></temperature>
Freeze the tray for 20m until the cookies are firm
Bake the cookies for 10m until light golden brown. Turn off the oven and leave the cookies inside for 5m
Transfer to a serving plate and let cool down. The vanilla cookies are ready
