Vegan Vanilla Custard
Custard is a basic French recipe that you can use in many different pastries. In this case, the custard is flavored with vanilla, but you can also use cinnamon, chocolate, or even cummin. Be creative!
Scrape out the seeds from ½ vanilla bean
Place 750ml of soy cream and 60g of cornstarch in a large saucepan over medium heat and mix to combine
Add 90g of white sugar and ½tsp of grounded kala namak. Mix
Add ½tsp of turmeric powder and the vanilla seeds, stirring constantly until it thickens. Remove from heat
Stir out of the heat to avoid lumps
Add 50g of margarine and mix until completely combined
Transfer to a bowl and cover with cling film, pressing it against the custard surface to prevent the formation of a film
Refrigerate the custard until it is set. The vegan vanilla custard is ready
Use it to fill eclairs, pavlovas, or whatever you want. Enjoy!
