This Warm Cherry Tomato Sauce pairs perfectly with a salad, grilled meats, roasted poultry, or even as a dipping sauce for some delicious bread!
If you don't like spicy foods, you can reduce the quantity of chili or leave it out altogether.
Halve 2 cups of cherry tomatoes
Thinly slice 2 red chilies
Small dice 1 medium white onion
Warm a pan over medium heat. Add 2 tbsp of extra virgin olive oil
Add the diced onion and cook, stirring occasionally, until translucent
Add the chilies and stir. Cook until fragrant
Add the tomatoes and cook until they start to release their liquids
Add ยผ cup of tomato sauce. Cook for 5m to thicken it
Season with salt to taste and add another ยผ cup of tomato sauce
Lightly crush the tomatoes with a wooden spoon or a spatula
Add the zest and the juice of 1 lemon. The warm cherry tomato sauce is ready
