
Wet Caramel

Wet Caramel is made by first dissolving the sugar in a little bit of water and then letting it caramelize.
You can use it just like any caramel. It's great with tarts, puddings, and fruits.
Add 250 g of white sugar to a medium saucepan. Add 100 ml of water
Add 10 ml of white wine vinegar and stir carefully to keep the edges of the pan as clean as possible
Bring it to a boil over medium heat until it turns golden brown
When it reaches 175 °C, carefully add 75 ml of lukewarm water, little by little, stirring to dissolve. The wet caramel is ready
Let it cool down and enjoy it in your desserts!
