Add 400ml of pomelo juice and 400ml of water to a sterilized plastic bottle
Gently squeeze the bottle to remove all excess air and close it with a carbonation cap
Attach the keg coupler to the carbonation cap. Adjust the pressure of the CO2 valve to 40 psi and turn the valve on the regulator to open it. Gently shake the bottle for 15s. Close the valve and remove the keg coupler
Carefully remove the carbonation cap to remove the excess pressure from the bottle. Put it back on
Repeat the process of attaching the keg coupler. Adjust the pressure of the CO2 valve to 40 psi and open the valve on the regulator while gently shaking the bottle for 15s. Close the valve and remove the keg coupler
Carefully open the cap to remove the excess pressure from the bottle and close it back. The pomelo soda is ready
Add 130ml of gin and 30ml of elderflower liquor to the cup of a blender
Add 30ml of vetiver liquor and 50ml of citric acid solution
Add 25ml of simple syrup and 100ml of grapefruit juice
Add 40g of coconut yogurt
Blend until combined and transfer to a jug
Let sit in the fridge for 1h until chilled
Strain the mixture through a coffee filter
Transfer the filtered mixture to a glass bottle
Add 80ml of the filtered mixture and 2drops of a 20% saline solution or a small pinch of salt to a mixing glass
Fill the glass with ice and stir to combine
Add 40ml of the Grapefruit Soda to a zombie glass with a rock ice
Strain the mixture into the glass and garnish with shredded coconut to taste. The maxima is ready
