Trim, peel, and chop 2 onions. Place them in a bowl
Trim and chop 1 leek. Add to the bowl
Crush 3 garlic cloves and add to bowl
Chop 1 carrot and add to the bowl
Drizzle extra virgin olive oil into a medium-large pot over high heat
Add the vegetables and stir. Cook until they are toasted
Add 2kg of fish carcass. Stir and slightly sear the carcass
Add 5L of water and bring to a boil. Reduce the heat to medium-low. and simmer for 45 minutes until it is reduced to ⅔
Strain through a fine sieve. The fish broth is ready
Use this broth as a base for risotto, fish sauce, or soup. Enjoy!
