Alfeizerão's Pão de Ló

Line an ovenproof bowl or baking pan with parchment paper
Preheat the oven to 200°C
Place 2 eggs and 8 egg yolks in a stand mixer bowl
Add 120g of sugar
Beat on medium-high speed for 15m until volume triples
Add 50g of sifted flour
Combine with folding movements, gently scooping the batter from bottom to top
Pour the batter over the lined bowl or baking pan
Place in the oven and bake for 10 minutes or until a golden crust forms
Drizzle extra virgin olive oil and season with flaky salt to taste. The Alfeizerão's pão de ló is ready
