Avocado Toast

A brunch favorite, this easy and delicious recipe also makes a great light lunch when paired with a fresh salad or slices of bacon and a poached egg.

Avocado Toast

Preheat the oven to 200°C
Place 2 sliced of sourdough bread on a baking pan and drizzle with extra virgin olive oil to taste
Rub 1 peeled garlic clove over each slice
Bake the bread slices for 7m util golden brown
Halve and deseed 2 avocados
Remove the pulp with a spoon. Place 2 halves in a bowl and set the others aside on the cutting board
Crush the pulps in the bowl with a fork until you have a slightly chunky paste
Add 1tbsp of plain yogurt and flaky salt to taste
Add the juice of ½ lime
Add black pepper to taste
Add teared coriander leaves to taste and stir to combine
Spread half of the avocado paste over each bread toast
Thinly slice the reserved avocado and arrange on top of the toast
Halve and thinly slice 1 radish. Arrange the slices to taste over the toast
Garnish with coriander leaves to taste
Season with flaky salt and black pepper to taste
Finish with extra virgin olive oil to taste. The avocado toast is ready
