This is a beautiful and simple caesar salad dressing made with anchovies and mustard. It has just the right amount of garlic and citrus.

1 cupEgg Yolk
2Peeled Garlic

Debone 8 anchovies
Add 8 peeled garlic cloves and the anchovies to a food processor
Add 2tsp of salt, the juice from ½ lime, and 59ml of worcestershire sauce
Pulse and scrape the sides. Pulse again to obtain a smooth paste
Add 2 egg yolks and ½cup of red wine vinegar
Add ½cup of dijon mustard and pulse until it is combined
Add 1¼cup of canola oil in a thin stream while pulsing
Add 1 cup of extra virgin olive oil in a thin stream while pulsing. The caesar dressing is ready
