The Funky Daiquiri is the name we gave to Daiquiris made with high ester rums—esters are completely natural compounds that give a diverse range of aromas and flavors to rum. They are created through chemical reactions initiated during the fermentation process, when yeast is mixed with molasses.

Add 500g of sugar and 500ml of coconut water to a large recipient
Blend everything with a hand blender until the sugar has dissolved and the mixture is homogeneous. The coconut water syrup is ready
Add 50ml of high-ester rum, 25ml of lime juice, and 15ml of the Coconut Water Syrup to a cocktail shaker
Fill the cocktail shaker with 1 cup of ice cubes
Strain into a chilled coupette glass. The funky daiquiri is ready
